From Jerez, Spain and made in the traditional Solera system, our Sherry Reserva 25 year aged Wine Vinegar has a true sherry flavor that can only come from cask-aging.
This fine Spanish vinegar is fabulous in reduction sauces, glazes and whenever strength and depth of flavor is desired.

Country of Origin: Spain

Ingredients: Sherry wine vinegar, grape must, naturally occurring sulfites

No artificial flavors or additional ingredients

Sherry Reserva Vinaigrette Recipe

•  1/3 cup Mount Dora Sherry Reserva Wine Vinegar

•  2/3 cup extra virgin olive oil (recommend Mount Dora Olive Oil for best pairing)

•  Optional 1/4 teaspoon of Mount Dora Olive Oil Garlic olive oil.

•  1 teaspoon Dijon mustard

•  1 small shallot, finely minced (optional, for added depth)

•  1 teaspoon honey or maple syrup (adjust to taste for sweetness)

•  Salt and freshly ground black pepper, to taste

Instructions

1.  In a small bowl or jar, whisk together the Estero Bay Olive Oil Pinot Noir Vinegar, Dijon mustard, minced shallot (if using), honey, salt, and pepper until well combined.

2.  Slowly drizzle in the extra virgin olive oil while whisking vigorously to emulsify the mixture. Continue until the vinaigrette is smooth and creamy.

3.  Taste and adjust seasoning as needed—add more honey for sweetness or vinegar for tang.

4.  If using a jar, secure the lid and shake well to mix.

5.  Store in an airtight container in the refrigerator for up to 1 week. Shake before each use.

Tips:

•  Pair with a fresh green salad featuring goat cheese, walnuts, and berries to complement the vinegar’s Pinot Noir essence.

•  For a twist, use as a dipping sauce for crusty bread or a glaze for roasted chicken.
