Recipes from Employees - Gail's Coconut-Lime Marinated Shrimp

Today, we are going to be making Gail's Coconut-Lime Marinated Shrimp! This dish is extremely versatile and great for a dinner party or even for a nice midday lunch.
For this recipe, you'll need the following ingredients:
- 2 LB of frozen, pre-cooked shrimp, thawed;
- 1 garlic clove, finely minced
- 1/4 cup of chopped fresh parsley
- 1/3 cup of Persian Lime Olive Oil
- 1/4 cup of Coconut White Balsamic
- 1 tbsp of Low Sodium Soy Sauce
- 1/2 tsp of red pepper flakes
- Freshly cracked black pepper
Directions:
- Mix all the ingredients (except for the shrimp!) in a sealed jar and whisk vigorously.
- Pour the combination over your shrimp and mix thoroughly! Refrigerate for at least three hours.
And that's it! You can serve this as an appetizer or over mixed greens as a salad. You can also switch out the balsamics and olive oils you use; our Toasted Sesame and Honey Ginger are also extremely popular for this recipe!
