Citrus Spring Salad

~Serve this refreshing salad alongside your favorite spring vegetables, or with meat or poultry fresh off the grill!~

  • 2-3 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 1 can mandarin orange segments, drained
  • 1/2 bunch grilled asparagus spears, chopped
  • 1/2 cup walnuts, toasted and chopped
  • feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 3 tablespoons MDOOC Tangerine Balsamic Vinegar
  • 3/4 cup MDOOC Eureka Lemon Olive Oil
  • 1 tablespoon dijon mustard (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Combine ingredients in a large bowl and toss. Enjoy!
